Sun-Kissed Recipe: Watermelon Popsicles

I've had to go on a new diet for health reasons and that has made me want to make healthy things my son will eat as well. Because you know that it basically becomes a family affair. We are just beginning on this journey, so bare with me as we learn recipes and try new things! I plan to share these experiences with you all.


Why Watermelon Popsicles?


Lately my son has come to love popsicles so I made my own recipe using watermelon, because it is a summer staple, juicy and refreshing. Plus they are naturally sweet, vegan and gluten free, and a low calorie treat with no preservatives or added sugar. I've had to cut out processed foods too so this is a great recipe to add to the list of things I can eat.

And of course my son was so excited to make them (we've got to make food fun for the little ones and show them how healthy isn't just good for you but can be exciting). This was my first attempt at making these popsicles and I have not perfected it yet, so you may want to adjust your measurements and use your best judgement!

Notes:

  • For more natural popsicles take out everything but the watermelon and lime juice. (I wanted them a bit creamier hence the coconut milk)

  • If you want the look of "seeds" put chocolate chips in every ten minutes allowing the layers to become solid

  • 21+ add in- two ounces of tequila before blending

  • If you don't want any pulp use a strainer

  • Substitute just about any fruit you want to; or lemon juice for lime

  • Store for 2-3 months
